Recipe: Woman Crush Wednesday

There have been 54 Woman Crush Wednesday recipients since I started this series to honor the wonderful women in the culinary world.  It is actually 56 if you consider on one episode there were sisters and another there were partners.  But in all that time I believe that today’s WCW is the youngest!  

At just 23 years old Indy Power, the gorgeous gourmet gal from Ireland, is blowing up with popularity through her clean and nutritious recipes.  She has a fab first cookbook out now called The Little Green Spoon: Deliciously Healthy Home Cooking to Share and Enjoy and boy I am lucky that I will get to enjoy a tasting of her recipe today.

Each week I re-create the  recipes live on Snapchat (username blissbakery) and it is always one I have never tried before.  But I am very excited about this, as Peppermint Patties are a delish but naughty treat I used to eat when I lived in America.  Indy’s mom is originally from America and would bring them back from the States for her.  So Indy took that concept and turned it around into a healthy version. It only has five ingredients and no baking whatsoever!  Super easy, so here goes folks!

Ingredients
1 Cup of Desiccated Coconut (90g)
1 Tin can of Coconut Milk (400 ml) that’s been Refrigerated Overnight
2 Tablespoons of Maple Syrup
1 Teaspoon of Peppermint Extract
100g of Dark Chocolate

Scoop 4 tablespoons of coconut cream from the top of the tin of coconut milk (keep the rest for something else) and add it to your food processor with the desiccated coconut, maple syrup and peppermint extract. Blend on high for about a minute until soft.

Lay some parchment paper out on a chopping board. Use your hands to roll the mixture into little balls (about half the size of the average energy ball) and then press them into discs on the parchment paper. Pop them in the freezer while you melt the chocolate.

When the chocolate is melted dip each disc into the chocolate to coat, shaking off any excess. Pop them back in the freezer to set. When they’re hard, they’re ready to eat. Store in the fridge.

Okay news flash, this is my new addiction.  That’s right and I have not an ounce of guilt.  They are gluten free, dairy free, refined sugar free and oh so delectable.  The only thing is they are very moreish and you can’t stop at one.  I inhaled three before I could blink.  And they are so easy to make I might be popping out a batch each morning while my Nespresso machine is heating up.  I am so impressed because I love the York Peppermint Patty brand but this is made with coconut, my fav.  So it is a million times better, and no sugar!

Indy is not only a great chef but a smart cookie. She graduated from the prestigious Trinity College in Dublin with a degree in business. And she has obviously put that to good use by navigating the social media business to perfection.  Her Instagram account is phenomenal with over 53, 000 followers.  Of course her adorable French Bulldog Arnie might have a little to do with it, but her superb photography and mouthwatering food play heavy on its success.

The sky is the limit for this Irish lass.  I for one am looking forward to eating my way through her cookbook.  Thanks Indy for being a great role model for young women, a fab Irish ambassador and all around fantastic healthy cooking chef!
