I’m not sure about you, but we are having lovely warm weather here in London. Which means I am craving some light and healthy salads! And today’s Woman Crush Wednesday honoree chef Lynda Booth is going to save the day. Especially since it is a quick and easy recipe for her Grated Carrot and Beetroot Salad. Because if you’re like me, some weekdays are hectic! With work and errands it leaves little time to get a meal on the table. So paired with a nice piece of fish, I am counting on this salad to be a 100 yard dash dinner winner!

I am so excited to share today’s honoree with you. Hubby and I watched Shelina Permalloo win Master Chef U.K. in 2012. We were still living in Dublin back then. As I was preparing for this week’s episode of Woman Crush Wednesday, Hubby reminded me that it was time for a savory dish. Not always, but traditionally I would alternate one week sweet and another savory. However, I tend to error on the side of sweets, cuz I roll like that! So as not to have three weeks in a row of treats, I chose a treat of a recipe by the amazing Ping Coombes. WCW honoree #89 has a wealth of recipes to choose from, but this savory “Asian Bologneses” as she has nicknamed it, sounds delicious by the list of ingredients! But I am not surprised, as Ping Coombes is a winner of Master Chef UK and a cookery book author!
Today is the 34th anniversary of my dad’s death. He passed away four days after his 46th birthday. This year his birthday fell on the same day as my Woman Crush Wednesday episode. I had planned to do a little Firefighter Fieldtrip as I do each year to honor his birthday. However, my cooking tutorial took a bit longer and the museum I wanted to visit had already closed. So I went out and about in London yesterday and saw a few cool sights that helped me feel that much closer to my dearly missed father.
I realize that for some this whole Woman Crush Wednesday means something all together different than how I interpret it. But to each his/her own. For me this day is a chance to shine the light on a female chef creating some fabulousness in the culinary world. The truth is that even having to say “female” chef is indicative of the fact that when you hear the word chef you think of a man. While most of the Michelin star chefs are indeed men, I have taken this day to create a whole LOVE fest for a fabulous female foodie. I am excited to announce the 88th Woman Crush Wednesday honoree is the gorgeous gourmet gal Tess Ward!
