The French Connection

No doubt Ireland is my soul home.  But it is safe to say that France is second on the list of places I could live. I’ve had the good fortune to see some amazing sights there over the years….skiing the Olympic slopes of Val d’Isere, walking the stoney beaches of Nice in the South of France, perusing the lavender regions in Provence, tastings at wineries in Bordeaux, honoring the fallen soldiers at Omaha Beach in Normandy, and yes even a pilgrimage to Lourdes. Happy Easter!

Happy Easter!  Or as we jokingly call it “Happy-ster”.  That’s because  after moving to Ireland we called Hubby’s mom on Skype to wish her a Happy Easter.  However, with the poor connection all she could hear was  Happy –ster!  Since we will hopefully be climbing Croagh Patrick this weekend I am sure that at the top of the Holy Mountain in the West of Ireland, it’s likely we won’t have the best connection either. Recipe: Chocolate Easter Cupcakes

As the Lenten season winds down all those desperate chocolate lovers can rejoice!  Easter time often means those who’ve given it up for 40 days can have a binge fest. Which by the way, technically the 40 days are over on Palm Sunday right? ! But anyway, back to the chocolate…most people think of chocolate eggs or Easter baskets busting with chocolate candy as the perfect way to break their fast.
