Outlived

I’m a bit under the weather today. A tummy bug.  I spent all of yesterday in bed apart from having a shower and going to mass.  And I mustered up the energy to do my Sunday Spotlight Snap Sista series on Snapchat (username: blissbakery).  I’m craving to get back in the kitchen but don’t think I can stomach it, literally. But sometimes in life, these pauses in our patterns are actually good. Helpful moments for some quiet reflection. So here is a bit of thoughtfulness for you, for what it is worth.

Today is my father’s birthday.  I won’t say “would have been” his birthday, because no matter what, this is and always will be the day he came into the world.  Though sadly he only lived four days past his 46th birthday.  I had 5 years of my childhood with him before my parents’ divorce and three years of my adult life with him, but I treasure those 8 years together.  I try to remember each and every interaction, what was said, what we did, what we wore.  But the Maya Angelou quote, “people will forget what you said and what you did, but they will never forget how you made them feel” is so true in this instance.  My dad made me feel loved.  As I have mentioned before, that wasn’t the case with my mom. But with my dad I always knew.

As I have shared on here before, my father was a fireman for the city of Chicago. He was the youngest of seven kids of Irish immigrants and tragically he was the first to pass away due to the results of a chemical fire.  He was a hard working man.  I think I get my work ethic from him. My hubby told me once I was a workaholic.  I prefer to think of myself as a Productiveholic. And my dad was one of those.  Because firemen work 24 hour shifts, they are then off for 48 hours.  So during those “off times” he wasn’t off but worked as a carpenter.  He was genius with his hands and could literally build anything.  Half of Chicago has bits of his cabinetry in their kitchens or totally fitted out basements.  All of his brothers and indeed his father were quite the tradesmen.  It was part of their Irish culture. As was being a firefighter too I suppose.

I think about how much I miss my dad, though I feel he is with me everyday. There’s a “Love Is” cartoon that says, “We don’t lose a loved one, but gain an angel” which I speak of often, and so I’d like to think he does watch over me.  But I can’t hug him.  I miss his “meat suit” as I like to call our human body.  I also think about the fact that I have outlived him by 5 years already.  And indeed my mom, if she has passed, which as I have shared the story before, I don’t know for sure.  But she was 51 when she disappeared, my age now. So it is strange to think you have actually outlived your parents.

So it makes me more appreciative of life.  Knowing that we don’t know when our time might be over. But rather than dwell on that, I focus on how each day is a gift.  We can’t avoid dying because eventually it’s gonna happen, but I like to think how can I live, right now, in this moment, on this day.  Even being sick, I still feel that it is a gift.  It is a moment to ponder, reflect and appreciate.  It is a time to let my Hubby look after me, which it is is hard for me to let others take care of me since I am such a giver.

There is a lovely poem called The Dash. I’ve put the full text at the bottom of the post.  It is a sobering reminder that the little punctuation mark that separates the dates of our birth from our death doesn’t really give an indication of what we have accomplished or achieved.  But since I have “outlived” my own parents, no matter how much longer the date on the other side of the dash is for me, I hope it is well spent, always and everywhere sharing LOVE!

Foodie Fieldtrip Friday: Climb and Dine

Nope, this isn’t an April Fools joke my friends. This is not only a Foodie Fieldtrip Friday, but its a Fearful, Freaky and Fun one too! I’ve been wanting to climb the O2 since I found out it was an actual activity.  But the weather can wreak havoc on plans of scaling the largest concert hall in Europe! So with improved weather, and the discovery that there is a package you can purchase that includes a meal I was like, HELLO where can I sign up!?

I told no one, including my Hubby, as I know he would have worried about my safety. And I surreptitiously booked and printed out my ticket without his knowing.  How did he find out? Why social media of course.  Oops not the best!   But I was going to tell him, he just saw my Instagram photo first!  Then he watched my snapchat story (though it has since expired, you are welcome to come over anytime to watch my wacky goings on at: blissbakery).  While we weren’t allowed to take snaps during the ascent or descent, we were able to do so while getting prepared to go up and of course on top of the summit!  Once we got down, I was so hungry I went straight to lunch! But I had to take this pic of the next group on their way up.  It made me feel really proud of myself for doing it!

The “Up at the O2” is a great way to see the view of London and the surrounding areas, while experiencing a breathtaking trek up and down a national landmark.  Though originally started as an activity coinciding with the 2012 Olympics, it was so popular that it is still going stronger than ever. They offer original climbs, twilight climbs and sunset climbs as well as the climb and dine which I did. They also have private climbs for parties, corporate team building and they even have a climb for those in wheelchairs.  It is actually one of the most popular climbs as people with limited mobility are able to experience the thrill of rock climbing in a safe and supportive setting.

I brought along my pal #snappy (the Snapchat mascot) and snapped pics of him along the way. I loved the whole process from step one of check in, to “training” to getting suited and booted. Of course the climb itself was a massive adrenaline rush.  I was scared, but with our guide Chris I felt well looked after.  And though I was the first climber, I was strapped in and 100% safe!  It was perfect weather, sunny and a bit of a cool breeze.  But the walk up was a bit bouncy due to the material used for the fabric walkway.

Once up to the top, everyone was buzzing around, taking photos and spotting all the different famous sights in the skyline. The total time of the tour was 90 minutes including our induction training and getting fitted with our gear. I was surprised at how much upper body strength was needed on the ascent. The decent was much steeper and used more leg strength. At its highest it is 52 meters, which is 170 feet (or the equivalent of a 17 story building).

Once we were down and undressed we were able to peruse the souvenir shop and purchase professional photos of ourselves. Though I didn’t get any goodies apart from a photo magnet, I think someone else had fun playing around!

Just a few last snaps before heading out to lunch, just to let Hubby know we were all safe and sound, and that we were total explorers!

Inside of the O2 there are numerous restaurants, cafes and bars. The voucher stated I was to have a two course meal at All Bar One. They were all ready and waiting for me with a personalized reserved table.  I was near the Cocktail Bar, which was quite tempting to calm the nerves after the exhilaration!

The menu I was shown was an abbreviated one from the normal restaurant menu. Which was fine, and I spotted what I wanted right away. The butternut squash burger sounded delish. But the waitress had to return to the table to tell me they were out of them. So I ordered a pasta dish. Then another server arrived to tell me that they didn’t have that either. Basically my choices were becoming more narrow by the minute!  I eventually asked her to just tell me what they did have available and then I went for the salmon cakes and salad.

I have to say I wasn’t that impressed with my main course.  I am not usually a harsh critic because as a chef I know how much work it takes just to get something on a plate!  But I have to be honest here and say that the salmon cakes were just so so and the cole slaw was way too mayonnaise-y.  The salad was the best thing on here and it was pretty much all vinegar. The service wasn’t that great either, not a single person came back to check on how things were. It wasn’t that busy in there with lunch customers, but maybe they were busy getting ready for a dinner rush.  Nevertheless each table, no matter the time of day or number of patrons, should be just as important.  Oh well.  However, the good news is that I am a dessert person.  So the Churros came and saved the day!!!  I rearranged them on my plate so that they all looked liked hearts, my fav! And I left a happy camper!

All in all it was a fantastic Foodie Fieldtrip Friday.  It was definitely a highlight of my time in London so far.  It was not only fun but also terrifying.  I’d like to make up a new word and say it was a terriFUNing day! And I would recommend it to anyone.  Even if you can’t climb the O2, just do something that scares you and stretches your safe zone a bit. You will end up feeling proud of yourself having gained new knowledge of your bravery and what you can actually accomplish!

ps. I dedicate this post to two of the most amazing Irish women who inspire me. Though I haven’t known either for very long, they show bravery everyday of their lives. Recipe: Woman Crush Wednesday

Is it me or did this Wednesday fly in without warning?  Maybe because of the long Easter weekend.  But nevertheless, since Wednesday is my fav day, I am delighted it is already here. Because this is the day I get to shower a female foodie with some culinary cuddles!  And today’s gorgeous gourmet is chef and cookery book author Mimi Thorisson.

Though Mimi is originally from Hong Kong, growing up she spent time traveling to France to visit her grandmother. Moving to Paris full time she worked her way through careers in modeling and media, before marrying her Icelandic photographer husband Oddur. As their family grew they relocated to the French countryside, Medoc specifically, and Mimi birthed more than babies. Her famous blog Manger brought to life her passion for food.  Oddur’s passion for photographing Mimi and her creations only added to the fairytale.  With over 200 thousand followers on Instagram, her account (@mimithor) is frequently on ‘best of’ lists.  It is understandable when you look at the sumptuous photos of her food and life with her beautiful family. With six children between them and fourteen dogs, there is ample photographic material!

Yet somehow, Mimi manages to make her incredibly delicious food unfussed and accessible. Her well received book A Kitchen In France just oozes with freshness, simplicity and exquisiteness.  It is really something out of a dream.  And she has a second book on the way. So before that comes out, you can give this recipe of hers a go, as I did live on Snapchat today (my username is:  blissbakery).  It is just the recipe to have on hand to make for picnics this spring when the weather is fine.  Or even for a lazy Sunday brunch when the skies are grey. Either way, Mimi and her stunning food will make it all a bit better!

Zucchini flans (makes about 10 small flans)

2 large zucchini, sliced in half-rondelles

5 eggs

4 tbsp cornstarch/corn flour (maïzana in France)

2 tbsp fresh lemon juice

A handful of chopped mint

150 g grated cheese (Emmental or Gruyère)

2 shallots, finely chopped

2 garlic cloves, sliced finely

½ tsp nutmeg

Salt & black pepper

Method:

Preheat oven 180°C/ 350 F

Slice zucchini thinly in half rondelles.

Slice shallots and garlic finely. In a large frying pan, heat 2 tbsp of olive oil and fry shallots, garlic and zucchini for a few minutes, until slightly golden.

In a large bowl, whisk eggs and cornstarch, then add grated cheese, nutmeg, salt & pepper.

Combine zucchini/shallots/garlic, lemon juice and sliced mint – stir gently.

Pour mixture into a muffin pan. Bake in oven for 20 minutes, until slightly golden on top.

Just because this recipe isn’t complicated doesn’t mean it doesn’t taste complex. Because it does!  The use of fresh mint and lemon is genius.  It is literally bursting with flavor. The shallot and garlic are a lovely earthy backdrop with the zucchini, as it tends to be a vegetable that is more on the neutral side in the taste spectrum.  But these little savory flans are absolutely divine!  Perfect to make in advance and have for a breakfast on the go, or a post work out pick me up. The choices are endless. You could probably swap out the mint for another fresh herb if you couldn’t find mint or if you aren’t a fan of mint in savory food.  And they are gluten free too!  Like a mini quiche but without the crust.  I must say that these fabulous flans are going to be my new ‘go to’ goodie!  If I only had so many helping hands in the kitchen like Mimi!

I’m really in awe of Mimi and her husband Oddur as I know it is a team effort. They have literally created a lifestyle, and are an inspiration for anyone wanting to achieve their dreams. I am beyond excited to see what is next. Best wishes to you and your family! And a giant Happy Birthday to you Mimi! How fortuitous that you were chosen as a #WCW on your birthday! Delighted!

Recipe: Dr. Carrot Cake

Dr. Carrot Cake indeed, did you know I have a PhD in Carrot Cake? Yes I believe there is such a degree. My thesis/dissertation was all about the best tasting carrot cake in the world.  And while I don’t have a paper certificate in a frame on my wall, I have years and years of training, testing, analyzing and perfecting the perfect carrot cake recipe. My daughter would even attest to that. In fact one quick read of a blog post of hers (click here) and you will see her sentiments exactly!  However, the silver (or maybe we shall call it orange) lining is that this recipe has been enjoyed by numerous and indeed high profile people. I made this cake for my son and daughter in law’s wedding cake. And have made it for birthday cakes umpteen times. I even made it for this blog before (click here). But today, I finally made it for Snapchat (my username is blissbakery).  However rather than a layered cake, I made the same batter just baked them into cupcakes.

Ingredients:

2 cups plain flour sifted (305 g)

2 tsp. baking soda

1 tsp. salt

2 tsp. ground cinnamon

½ tsp ground nutmeg

1 tsp. ground ginger

2 cups sugar (420 g)

1 ¼ cups vegetable oil (300 ml or ½ pint)

4 large eggs

3 cups grated, peeled carrots (275 g)

1 cup coarsely chopped pecans (optional) (100g)

½ cup raisins (optional) (85 g)

Preparation:

  1. Preheat oven to 350 F/180 C degrees. Whisk flour, baking soda, salt, cinnamon, nutmeg, and ginger in a medium bowl. Once blended set aside.
  2. In a large bowl whisk sugar and oil until well blended. Add eggs one at a time and mix. Add flour mixture and stir until well blended. Stir in carrots (and pecans and raisins if using).
  3. Divide batter among cupcake pans (tins) that have been lined with paper liners. Using an ice-cream scoop, fill the cupcake pans about ¾ full.
  4. Bake about 14-18 minutes or until toothpick inserted in center of cupcake comes out clean. Let cool in pans about 5 minutes then transfer to a cooling rack. Cool completely before icing them. You can use a piping bag or an offset palette knife to spread the frosting on top.

For the Cream Cheese Frosting

600 g (1 lb 5 oz) Icing Sugar (called confectioners sugar in the U. S) sifted

100 g Butter (3.5 oz)

250 g (8.8 oz) Cream Cheese

Drop of vanilla extract

Pinch of salt

To make the cream cheese frosting, combine the butter and sugar in a mixer. Add the cream cheese all in one go. Beat on low until incorporated. Add the vanilla  and salt. Then increase speed of the mixer and beat several minutes until fluffy.

While I have traditionally made these at Easter time (as well as every other month of the year) I wasn’t able to make them for the tutorial until today. Hubby and I took a quick weekend trip to Ireland and it was a bit hectic before we left. However, since the 1916 Centenary Celebrations were in full force while on the Emerald Isle, I was inspired to make a cupcake in honor of the angels that gave their life for their country. I even used angel cupcake paper liners/cases.  So while a few of the cupcakes will be adorned with my edible carrot decor (made from fondant icing) there are also some of the tricolor persuasion.

My favorite moment from what we watched on television while on the family farm in Galway, was Paul Muldoon’s line ” Let passion and compassion be the height of fashion”. I love it because I do feel Ireland is so generous as a nation and as individual people. So I am going to tap into my Irishness and give away these cupcakes tomorrow for Random Act of Kindness Wednesday. A fellow snapper and Irish woman Miriam of www.bakemystyle.com has a weekly challenge to share some kindness on the day. I’ve participated before and love it! And I love these cupcakes. Hope they bring joy to some folks out there too!

Sunday Spotlight Snap Sista

The Sunday Spotlight Snap Sista has become one of the most popular installments on my snapchat account (username: blissbakery). I started it as a way to shower someone from Snapchat Land with a little love, and also to help the rest of us learn a bit more about another snapper. And rather than call them by their own name, I refer to them as a Snap Sista. Like a Bosom Buddy, Pen Pal or Facebook Friend, which by the way can be a woman or a man!

Because of the day that is in it today, Easter Sunday, I won’t be doing an episode. Therefore I have decided to take this time to do a little recap.  It has been my utter pleasure to dedicate a Sunday afternoon to make someone out there feel special. These are people I have been watching on Snapchat and they have brought so much fun into my life. So only fair I return the favor! There have been 9 weeks (installments) so far and each one has been a sheer joy to do. I incorporate special music hand picked for each recipient along with a special gift (usually foodie related) that the honoree receives. Then the rest of us get a gift too, which is a quote inspired by the Sunday Spotlight Snap Sista!

Holly Shortall (@hollywooddublin): Holly’s gift was a pair of Glam Kitchen Gloves (with a lashing of leopard print, her fav).  Holly is a world famous fashion illustrator and popular social media personality. I absolutely love this woman and call her a friend!  She is the reason I am on Snapchat and I owe her a great debt no doubt!  She has done several commissioned works for me (including this moving card) and is incredibly talented. Holly always has a funny outlook on life, whether it be about fashion, makeup or current events.  She is Irish and lives in Dublin. Besides her art, she also works for a marketing and media company (@newslangie) and is doing on camera work as well…’litch looking gorge.” A caring philanthropist, she has spent time in the refugee camp in Calais.  The quote for all of us inspired by Holly, “Our lives begin to end the day we become silent on things that matter”.

Miram O’Sullivan (@bakemystyle): Miriam’s gift was a set of Valentine’s themed cupcake cases. Miriam is food/fashion blogger originally from Kerry, Ireland but living in London. She is one of the most fun people to watch on Snapchat, so cheerful and engaging. She is stunning with her bright ginger hair and wears equally bright assorted lip colors. I had the ultimate pleasure of finally meeting her a couple of weeks ago on a Foodie Fieldtrip Friday!  I always look forward to her upbeat snaps.  She brings a bit of sunshine wherever she goes! And occasionally we get to see her adorbs bearded hubby Dave!

 

IMG_5542Kelly Ging (@KellyLouCakes): Kelly’s gift was a package of rubber erasers in the shape of baked goods. Not that she would need them as I suspect she doesn’t make many mistakes. This lady is a force to be reckoned with!  Kelly is the owner and head baker of Kelly Lou’s Cakes and Cafe in Portlaoise, Ireland.  I was able to meet her when I did a Foodie Fieldtrip Friday out to her place. I ate an amazing Rocky Road Cupcake there too! But the biggest treat of all was meeting Kelly Lou herself. And her smile is even bigger in person! Truly one of the nicest people that ever walked this earth! Hence this quote below inspired by her ethos, which could do all of us some good!

Paul Broughhall (@paulieblogger): Paul’s gift was a package of marshmallow Peeps. Why you might ask? Well Paul is not only a blogger and children’s author, but he is the creator of the “Artistic Chicks” and it was only fitting he got one of America’s most iconic Easter goodies.! The Artistic Chicks have painted portraits of numerous celebrities and have brought joy to the social media world and beyond. I have never met Paul personally, but his snaps are all about music and art and the stories he creates out of them. I have been told he is quite tall, but if this is the case, he is a gently giant. He is the most lovely and pure soul I have seen. His quote sums it up perfectly:  The nicest thing you can do for anyone in a day is to make them a little bit happier than they were before they met you!

Katrina Kelly (@KatrinaK2Hair): Katrina’s gift was a large Chocolate Bar wrapped to look like a Million Dollar Bill. Back in January I met Katrina in person. She is so beautiful with her radiant blue eyes.  I met her at her fav coffee place called Treat, just around the corner from one of her shops. I was struck by her beauty, but even more gorgeous is her soul on the inside. A successful business woman with two beauty salons in Dublin, she just launched a make up line called PUSH and she also does makeup/hair master classes. But her #1 job is mommy to her two gorge kids! And this future bride is getting married this summer! Congrats Hun and Matt is one lucky guy!  Katrina is positivity personified! This quote was one I submitted to a contest she was running. I won some PUSH makeup, but even better, I’ve won a lifelong friend!

Jen Morris (@toodollymakeup): Jen’s gift was a set of lip balms in cute cupcake pots. This girl will eventually rule the world it would appear. She is a super popular blogger, snap chatter and Instagram Queen. She has thousands of loyal followers and she is still as down to earth as the day she left her family home in Clonmel for the big time in Dublin. But she is so popular because she doesn’t mind showing you her bare no makeup look, which is as important as the Glam Jen! She is also as student getting her degree in business. Jen is so generous with her skills and often does makeup tutorials for Snapchat. How she does perfect eyeliner with one hand while holding her camera phone with the other is beyond me!  Not only is the makeup on fleek, but so is she! Love ya Jen!  I’m still practicing and one day I’ll make you proud!

Tracy Benjamin (@tshutterbean): Tracy’s gift was a salt and pepper shaker set with the logo “Keep Calm and Carry On” Tracy is a San Fran girl.  Hence her snaps reflect that. Along with her son Cooper, husband and a cat named Pinot, Tracy’s style is introverted, thoughtful and awesome. She snaps some of the most beautiful images I have ever seen. Whether it be food, or rain water on a leaf. This girl has the eye and shares it all with us! Tracy’s quote:  Mother’s hold their children’s hands for just a little while, their hearts forever. Perfect for the day as it was Mother’s Day in Ireland the day she was chosen. And as a mom herself (though in America Mother’s Day isn’t celebrate until May) I thought she could appreciate the sentiment behind this Irish proverb.

Laura Cunningham (@cunninghamlaura):  Laura’s gift was a mug personalized with pics of her cat (#markthecat). I figured since she loves him so much she can have him with her while she is indulging in a cuppa tea at work!  He really is a cute cat! And a bit of a rascal.  I first started to watch her snaps around Christmas when #markthecat would climb the tree and remove the ornaments! Oops!  Laura is an editor with Confetti Magazine as well as the creator of her online gifts store called Hippenings. Laura is always on the ‘best of’ list for snappers and is part of the popular group of snappers called Bridies. Though I have yet to meet her, I feel like I know her. She shares raw uncensored chat about life in general, as well as beautiful images such as a recent ski trip. Utterly dreamy! Her inspired quote is actually from her Instagram account: What would you do if you weren’t afraid?!

Maria Ryan (@mariaryan2014): Maria’s gift was Coco Pops Cereal Flavored Lip Balm. Say what? Well you would had to have seen her story for this to make sense. But let’s say she took an early morning trip to the store for a giant box of her fav Coco Pops Cereal. And after three bowls shared the rest with the neighborhood birds and cats!  It was classic!  Now the perfect gift would have been the actor Colin Farrell, her Hollywood crush.  This is the girl who I said represented Quality Time from the Five Love Languages book. And it is the truth!  She is the only blogger I know that actually looks at the camera and says, ” how are all of you today?” and checks in with Snapchat each morning and evening. She is a super special person.  In fact she is a play therapist working with autistic children and those suffering from various challenges. I had the pleasure of meeting her for a cuppa back in January and it was lovely!    And no one on Snapchat gives as good a tour as Maria. We were covered for sure on Paddy’s Day as she drove around Dublin taking in all the historic sites lit up Green! And filmed it all for Snapchat!

Recipe: Happy Good Friday

“Happy Good Friday” I exclaimed as I ran up to hug the priest.  My Grandpa O’Neill (whom I’ve spoke about on here before) was not amused at my exuberant six year old self.  In fact when we left the church I got into big trouble from him. “You don’t say Happy and Good Friday together, it is not a happy day at all!” I pouted for a minute stingy from his rant.  Because I’ve never liked to get in trouble, even now as a 51 year old woman.  But then I had a notion.  If Good Friday hadn’t happened, then we wouldn’t have Easter, right?  So in essence, it’s the reason for the season,which is indeed HAPPY!

And how do I like to celebrate happy things, but with food of course. So today I have the perfect little treat to make for your tea time or even as an activity for the kids. Likely they are off school and looking for something to do.  In fact I often do this as a craft for children in Sunday School or even for a First Holy Communion Party.  It is the perfect cookie (because, well it has been named after my favorite man crush, Marty Whelan and his mustache cookies).  I made them and shared the story and recipe, but for this I just use a cross shaped cookie cutter.  I call them “Holier Than Thou Cross Cookies”.

Ingredients:

2 cups (310 g) plain flour

¼ tsp salt

3/4 cup ( 172 g) salted butter, softened

3/4 cup caster sugar (160g)

1 egg

1 tps vanilla extract

sprinkles and other decorations

Preheat oven to 170 C/325F/Gas mark 3. In a medium bowl combine flour, and salt. Set aside.
In a large bowl of an electric mixer, beat butter and the sugar until creamy, light and fluffy, about 3 mins. Add the eggs and vanilla, beating until well incorporated. Scrape the sides of the bowl, then add the flour mixture. Beat on low to combine but do not overmix.
Gather the dough into a ball. Flatten the ball into a disk and wrap tightly in plastic wrap (cling film). Refrigerate for one hour until firm.
On a floured surface, roll out dough to a ¼ in thickness. With cross cookie cutters, cut dough and place on a parchment lined baking tray. Bake for 13-15 mins, until slightly golden at the edges. Remove from the oven and immediately transfer with a spatula to a cool flat surface.
Now the cookies are ready to decorate with icing and sprinkles!

Below are some pics from a time I took these cross shaped cookies to a girls’ bible class. They went crazy with all the icing and bits and pieces of decor!  Before we started the decorating, I shared a story with them.  I used the visual of the cross to teach them about LOVE (my favorite topic).  I shared that the reason that Jesus died on the cross is that He laid down His life for us.  Because He loved us. But the significance of the cross shape (one straight line vertical up and down, and another a horizontal line across) is that it represents LOVE.  It is love the goes straight up to heaven and the love that goes outward to our neighbors. The girls loved the talk, but loved the cookies as much and dove in making loads to take home to their family and neighbors.

Whether you make either of the cookies or not, I just want to wish you and your family a Happy Easter. It is nice to have the little break before Spring arrives. And its the pause, a reminder, to be grateful for all our blessings.

Recipe: Woman Crush Wednesday

Do you remember back to when you were a kid and that feeling you got the night before Christmas? Just busting to wake in the morning to see all the wonderful treats under the tree? Well that is how I am on Tuesdays, beyond excited for Woman Crush Wednesday to arrive!  A wonderful day to indulge the infatuation over a female foodie, and recreate one of her recipes live on Snapchat (my username is: blissbakery)

For those of you not on Snapchat (yet) on here I share my “love story” as I call it, of this gorgeous gourmet gal.  And highlight the recipe for her delicious treat that I make for the tutorial. Today our fantastic female is straight from a farm in Ireland.  Imen McDonnell is known around the globe as the American lady whose heart was swept away by an Irish farmer. His gain was also our gain. Imen took to country life and used the experience as an outlet for her creativity. Writing a famous blog called Farmette, raising a handsome son and doing loads of cooking and baking along the way.

I had the most amazing fortune to actually meet her yesterday!  Her first book has just been published and she is on the road promoting it. Luckily one of the stops on her tour was London.  So I headed down to the Violet Bakery (where I went just a couple of weeks ago for a Foodie Fieldtrip Friday) and  purchased a book, had it personalized by Imen, and most of all got to have a wee chat!  She was surrounded by adoring fans, but took time to have a personalized conversation with each one of us.

She is absolutely stunning and yet so warm and approachable. She was wearing her signature apron and with her thick blond curls and flawless skin, she looks like she stepped out of an ad for Town and Country.  But when you talk to her, the calm and approachable manner that shines through in her writing was what you felt. I’m only new to social media and have been following along on her gorgeous Instagram and Twitter accounts. She is very active and supportive of other foodies and important food issues.  Especially as it relates to Irish agriculture specifically and farming in general.  Her support of Irish food led her to produce an amazing film called Small Green Fields. It is an ode to Irish artisan foodie products and will likely leave you with a tear or two as it is so poignant and precious.

 I have been an admirer for quite some time of that treasured blog of hers. Classic, timeless recipes and photos that are effortlessly styled, all of which she does on her own. This woman’s talents know no bounds!

The book has so many fabulous recipes  I’d like to try, but thought a nice loaf of Irish bread would be perfect. So let’s give the Irish Stout and Treacle Loaf a go shall we?

Ingredients

2 cups (250 g) all purpose flour

2 cups (250 g) whole wheat flour

1 3/4 cups oats (150 g) rolled oats, plus more for sprinkling (optional)

1 TBSP baking soda

1/2 tsp salt

2 cups (500 ml) buttermilk

2 TBSP black treacle (or molasses

1/4 cup (60 ml) Irish Stout

2 TBPS honey

Method

  1. Preheat the oven to 400 F/200C. Line a 9-inch loaf pan with parchment paper.
  2. In a large mixing blow, stir together the flours, oats, baking soda and salt. Make a well in the middle and pour in the buttermilk, treacle, stout and honey. Using your fingers, lightly mix into a wet dough. Do not over mix or knead
  3. Spoon into the loaf pan, and slit the top of the dough with a knife. Sprinkle with rolled oats (if using) Bake for 45-50 minutes.
  4. Remove the pan from the oven. Turn the bread out, transfer to a wire rack, and lay a slightly damp tea towel over the top;  leave to cool completely.  The tea towel will help keep the moisture in and the crust from becoming too hard.

Let’s just say that I could have eaten this entire loaf! I was good, however, and only ate a slice off the end (slathered in Irish butter no less). But it is absolutely divine! The treacle and honey add the perfect sweet combo, and the color and flavor reflect the Guinness richness. I read in the book that this bread makes for a lovely cheese toastie! Of course not just any kind of cheese toastie. Imen makes hers with some Gruyere and sliced apple. Mmmm, I’d be having that too please!

It was a lovely day to spend focused on the food, ethos and effervescence of the amazing Imen. I felt like I was on the farm with her baking away singing  some Country Western tunes (though I’m very bad at the signing part). As I look through the book in the days ahead I will treasure it even more now. Because there is a lovely handwritten note about our joint American birthplace. And though neither of us lives there anymore, it is another way to find common ground.
